Mexi Roasted Cauliflower

If its got Mexican flavors, I am all about it! This one is easy to make and that's why I love it!



Mexi Roasted Cauliflower

Yield: 1 roasted cauliflower Recipe From: Ken


What you will need:

  • 1 large head of cauliflower

  • 3 tbsp olive oil (*or any other neutral flavor oil you prefer)

  • 1 packet of Mrs Dash no salt taco seasoning

How to Make The Mexi Roasted Cauliflower:

  1. Trim the leaves from the head of the cauliflower and remove part of the core. This will help it sit up right.

  2. Mix the taco seasoning and the olive oil together and brush it on to the cauliflower evenly so it is well coated.

  3. Preheat your oven to 425* F.

  4. Place the cauliflower on a parchment, or silicone, lined baking sheet and cover the cauliflower with foil.

  5. When the oven is up to temperature, put it into the oven for 45-55 minutes. The length of time will depend on the size of your cauliflower. The large one from the pictures on this page took about 55 minutes.

  6. When it has finished roasting, remove it from the oven, and slice it the way you prefer. As you can see from the picture below, I like to serve it with other Mexican style sides.



Tip: Remove the foil for the last 10 minutes or so to give it an even more roasted look and taste.

Optional: Serve it with some great sides, like a cup of cheesy black beans, a half of a sliced avocado, 1/2 cup of chunky salsa and some roasted pepitas for a great dinner.
