I am always looking for something easy to make. This sauce couldn't be easier! It goes great on all sorts of veggie and even with tofu mixed in (like the picture below). It could be a game changer for me because of how you can make it straight up or toss in some fresh ginger, or you can make it a little spicy or super spicy. You can add veggies and serve it over some noodle or rice. Lots of options, which makes things easy for me.
"General Ken's" Spicy Sauce
Servings: Four 1/4 cup servings
What you will need:
1 cup low sodium vegetable broth
1 tbsp low sodium soy sauce (*I use "Best of Thailand")
3 tbsp apple cider vinegar
1/4 cup of sugar (brown or white)
2 tbsp cornstarch
1- 2 thinly sliced serrano peppers
1- 2 thinly sliced Korean peppers
thinly sliced fresh ginger (*optional)
How to Make "General Ken's" Spicy Sauce:
In a small sauce pan, over medium heat, add the first 5 ingredients and stir well. As this heats up, it will start to thicken up. When it gets thick, it is good to go. That is the basic sauce. You can use it just like this if you prefer.
To make it spicy, just after stirring the first 5 ingredients well, I like to add some thinly sliced peppers to let them cook in and simmer with the sauce to make it spicy. You can put in as many as you like to get the "fire" you are looking for. When its thick, you are ready to go.
For something just as good, but different, omit the peppers and add to it some fresh, thinly sliced ginger. Make sure you peel the ginger first before slicing. Just like the peppers, toss that in after stirring the first five ingredients and let it cook and simmer in the sauce.
When done, toss it on your vegetables or whatever and enjoy!
Tip: I originally made this using regular brown sugar. However, I have since substituted that for white Monkfruit Sugar. I know you can get Monkfruit Brown sugar, but I have never used it. You can see the difference in the numbers below...
