The other day my wife made herself some canned corned beef hash and I have to admit it smelled really good. That got me thinking about it and I wanted to make some for myself!
Ken's Vegan Corned Beef Hash
Yield: 2 Servings
What you will need:
1/2 onion, finely chopped
2 cups diced potatoes (you can use any type you like)
1 cup vegan corned beef (Link: "Ken's Vegan Corned Beef")
2 tbsp vegan butter
1/2 - 1 cup "Yummy Yummy Gravy".
How to Make The Corned Beef Hash:
Peel your potatoes and dice them up.
In a large skillet over medium high heat, put the vegan butter and let it melt before tossing in your potatoes. Cook them until they are starting to turn golden brown.
While the potatoes are browning, dice up the vegan corned beef. Once the potatoes are good and browned toss in the corned beef and mix well and continue to cook until heated through.
When good and hot mix in the "Yummy Yummy Gravy" to coat everything. You do not want it swimming in gravy (though, that sounds good too), but just covered.
Serving Suggestions:
I like to serve the corned beef hash on top of a slice of toast.
Storing leftovers in the refrigerator:
To store in the fridge I suggest placing the leftovers in an airtight container. It will stay good for up to a week, if it lasts that long.
