Who doesn't like Mexican food? I could eat it 7 days a week without getting bored! I had been watching one of my favorite YouTube Creators, "Monson Made This", and he had his version of "Air-Fried Vegan Mini-Chimis" and I knew I had to make some, with my own person take on them.
Air Fried Vegan Chimichanga
Servings: 8 Chimichangas
What you will need:
3 cups refried beans (Link: Ken's Vegan Instant Pot Fried Beans)
3 cups Spanish-style rice (Link: Ken's Spanish-style rice)
1 cup shredded vegan cheddar cheese (Link: Ken's Vegan Cheddar Cheese)
8 10” uncooked flour tortillas
Diced tomatoes, diced onions and sliced avocado, optional
Vegan sour cream, optional (Link: Ken's Vegan Sour Cream)
Salsa (or other hot sauce), optional (Link: Ken's Salsa)
How to Make Them:
In a large bowl, mix to combine the beans, rice, and cheese. Spoon an equal amount of the mixture into middle of the uncooked tortilla. Carefully fold the sides of the tortilla in towards the middle and gently press down so it stays in place. Then, grab the bottom flap of the tortilla and fold it of the middle and press down gently to hold in place. Finally, grab the main body of the chimichanga and roll it on to the top part of the tortilla. Pres gently to make sure it holds in place.
Repeat until you run out of tortillas.
Cooking them in an air fryer:
Preheat your air fryer to 400*. Place the chimichanga on the air fryer basket and close the door. Keep an eye on it as once it starts to brown, it will do so in a hurry. I like to cook mine on the bottom first, then flip to cook the top last. You will know it is done when the chimichanga is golden brown on all sides.
Storing leftovers in the refrigerator or freezer:
To store in the fridge I suggest just wrapping each chimichanga up individually in saran wrap, then into a zip lock bag. These will stay good for up to 5 days.
To freeze, I like to place the chimichangs and a cookie sheet at least a couple inches from one another and put them into the freezer to freeze first. Once frozen I will take 2-3 of them and vaccu pack them. Once done, back into the freezer they go.
