No Oil Ranch Dressing

I absolutely love the Ranch Dressing I had been making with the base of the vegan mayo for salad dressings I had made. However, I love salad dressing. I know they tell us "Don't drowned your food", but I love salad dressing on my salads so much so I needed to figure out a way to bring down the calories, yet still be something very enjoyable. The easiest way was to get rid of the oil!

No Oil Ranch Dressing

Yield: 24+ - 1oz servings

What you will need:

  • 1.5 cups raw cashews

  • 2 cups soy milk (or plant based milk of choice)

  • 1 tbsp garlic powder

  • 1 tbsp onion powder

  • .5 tsp low sodium pink Himalayan sea salt

  • 1 tbsp dried dill

  • 1 tbsp dried chives

  • 1 tbsp dried parsley

  • 3 tbsp apple cider vinegar (*or sub 1 tbsp of lactic acid )

How to Make The Ranch Dressing:

  1. If you have a high speed blender, like a Vitamix, you can just toss the cashews in with 1.5 cups of the soy milk. If you do not have a high speed blender, you will want to soak your cashews either overnight, or you can boil them for 10 minutes as well.

  2. Check the thickness. If you like what you see, move to step 3. If not, add a little of the last .5 cup of soy milk to get it where you want it. Be advised that this will thicken up as it sits in the fridge and gets cold, so it is best to be a little on the runny side to start with.

  3. Once you have got the consistency you prefer, pour the mixture into a large mixing bowl and hand whisk in the remaining ingredients. You do not want to do this via the high speed blender as it will rip the dill, chives and parsley to shreds and it will taste a bit odd (trust me on this!).

  4. Once you have whisked it all together nicely, pour it into your container and this will hold very well in a fridge for up to about 10 days.

Tip: This gets better after it sits a while to allow the dried spices to get rehydrated and mingle with the other flavors. Tip: If it thickens up too much as it sits in the fridge, you can either add a little more soy milk, or even some water, to thin in down a little.
