While I do have a recipe for a regular mayo, I decided to "KISS" this one... Keep It Simple Stupid! The reason being is that for salad dressings all I need is the basic mayo and then I can flavor it the way I want when I make my dressing. This is especially important to me when adding salt. This is the reason why I make this when I need to make salad dressing and I do it with just the oil & soy milk to make it a plain, blank canvas.
Mayo for Salad Dressings
Yield: 3+ cups

What you will need:
300 ML Soy Milk (unsweetened works the best)
300 ML Oil (any neutral flavor oil, I use canola)
How to Make The Mayo:
Put the milk in the blender and then turn it on the low end and slowly start to add the oil. Add just a small amount first, maybe a tbsp or so, and let it blend for about 20 seconds. Then add a little more. Keep adding the oil slowly until you have added it all. You will see that it don't take long for it to emulsify and get thick. You will need to increase the speed of the blender as you get more mayo in it and as it thickens.
I like to store mine in a pint sized Mason/Ball jar (as seen above). This will make a little more than what can fit into the jar, so I use that extra to make some of the ranch dressing I really like.
