When I was in high school and for a few years after that I worked in restaurants. I started as a dishwasher and worked my way up to being a lead shift cook. My mom was the manager of the last place that I worked at and I really enjoyed getting to work with her. She taught me so much from her vast knowledge of cooking. One of the things she made that was so good was what she called her "Reese's Pieces Pie". It wasn't something that I had ever made on my own, but I got to thinking about it one day and I decided to make my own version of it, but veganized.
Ken's Vegan Chocolate/Peanut Butter Pie
Servings: 8
What you will need: For the Chocolate Pie Filling:
6oz silken firm tofu (*must be silken)
1/4 cup of plant based milk of your choice (*if you can find a chocolate milk, all the better)
6oz of chocolate chips (*make sure they are vegan)
For the Peanut Butter Pie Filling:
6oz silken tofu (*must be silken)
1/4 cup of plant based milk of your choice
1/2 cup creamy peanut butter of choice (*chunky works too as it will be put into a blender)
For the Pie Crust:
Your choice of pie crust, I like you use a chocolate graham cracker crust (*make sure it is vegan)
How to Make It:
Blend all of the ingredients for the chocolate pie filling, except the chocolate chips, together in a high speed blender until smooth and creamy. You will need to melt the chocolate chips in a microwave. Make sure that you only heat it in small amounts of time and stir in between as the chips can burn in a hurry if you aren't paying attention. Once the chips are melted, add them to the mixture in the blender and blend. This should thicken up some, so you might need to scrap down the sides some to make sure it is all mixed evenly.
When blended good, pour that mixture into your pie crust and give it a little shake to make sure that it is evenly distributed. It might not look like a lot of filling but remember, we still have to add the peanut butter filling later. You will then want to put the pie in the fridge for at least 2 hours for it to stiffen up more.
When the 2 hours is almost up, you will want to make the peanut butter pie filling by putting all of the ingredients for it into a high speed blender and blending until smooth. This should thicken up some, so you might need to scrap down the sides some to make sure it is all mixed evenly.
When it's blended good, pour it in on top of the chocolate pie filling. Give it a little shake to make sure it is distributed evenly. Put it back in the fridge to chill. Try to allow it to sit for 12-24 hours for it to firm up. It's worth the wait!
I like to top mine with some chocolate chips, as seen in the picture above.
To Serve: Cut a slice and enjoy!
