I grew up eating hot dogs. I love how quick, easy and cheap they are. About a year ago I started looking for a way to make some for myself and I eventually saw a video on YouTube for "Smoky Vegan Carrot Dogs" by Brand New Vegan. He had two ways to make them and one was with an Instant Pot, so I knew I had to try them!
Vegan Carrot Dogs Recipe From: Brand New Vegan Servings: 8
What you will need:
8 good sized carrots, peeled,
For the Marinade
1/4 cup low sodium soy sauce
1/4 cup apple cider vinegar
1/4 cup low sodium vegetable broth
2 tbsp maple syrup
1 tbsp liquid smoke
2 tsp yellow mustard
1 tsp minced garlic
1 tsp jalepeno juice, optional
1 tsp onion powder
How to Make Them:
Cut and peel your carrots so they are basically the length of your buns.
Add your marinade ingredients to your Instant Pot and mix well. Add your carrots. Put the lid on, then cook on manual for 3 minutes. When done, do a Quick Release. The hot dogs will get better if you can let them sit in the marinade for at least an hour after they are done cooking.
Serving Suggestions: Heat your buns, add your vegan carrot dog and top with your favorite toppings. Storing leftovers in the refrigerator or freezer: These are easy to store in the fridge, just put them in a zip lock bag and away you go. They can be frozen as well, if you prefer. I would suggest vacuum packing them, then freezing.
